For my school shows, we get the cast list pretty soon after auditions. Usually within a couple days. For the community shows I do around here, it's usualy anywhere from a few days to a week, same with the community shows around home.
Last spring I was in "Into the Woods" with an adult theatre company in the area, and we had to wait two weeks after callbacks before the cast list went up. I think that's the longest I've ever had to wait so far.
Waiting is horrible. I sometimes go insane, even waiting one night if it's for a part I really want, but I've gotten used to it. I suppose most actors do at some point or another...
