Totally agree in most cases. I think it is because talent of the actors/singers gets better and better. Also, sometimes the writers take advantage of the opportunity to improve their own work, fixing things that maybe they weren't happy with the 1st time around. Older works where the writers aren't around anymore, other folks improve things. I've got some old shows with the original singers and they weren't all that good at singing! Today, that would never happen. Talent is a dime a dozen and they can find outstanding singers to sing roles that weren't all that great before. Often orchestrations are improved. One thing I liked was when CD's came out, they started putting music that wasn't recorded before. On old albums, there wasn't always room to put entire scores. Today, you get everything recorded which is so much better.
I will say that I've heard that even though Patti LuPone is a better singer, folks who saw the original staging of the Angela Lansbury production with all the sets and costumes of the period like it better staging wise. But I haven't seen the new version yet, so I don't know. I have seen Ms. Lansbury's version and loved that production.
